Dining at a five-star restaurant should be an adventure and exquisite culinary experience—both are found at Fiola Mare in Georgetown. We arrived at twilight and were seated in an alcove with a side view of the canal. A grand bar behind us, semi-lit and lined with gleaming stem wear, exuded the sense of promise characterizing bars frequented by Washington’s power elite.
In this genteel yet charged atmosphere, we ordered Caviar de Venise for the table. This Siberian sturgeon was served with chive biscuits and finely sliced egg. Its buttery, nutty flavor had a hint of the ocean; a slight taste of iodine lingered on the palate. In other words: it was addicting. My guests had grilled trout and cod; my partner and I both ordered a dish aptly named “Under the Sea.” This entrée is composed of branzino, Maine lobster, langoustine, scallop, mussels, foie gras, quinoa, maitake mushrooms, and parmigiano dashi. The seafood was glistening and still flushed, as if hauled up from the ocean hours earlier.
The evening had a leisurely European tempo; our dishes appeared and disappeared at just the right moments and chitchat was minimal. There was just one problem: the portions overall were small. I must admit, I expected abbondanza, especially when I read “parmigiano dashi.” There was an upside; we had plenty of room for dessert. We indulged in a whole berry tart that arrived warm and wrapped in a rustic, cheerful cloth. This delicacy, served with ice cream, made up for any previous shortfalls. All was forgiven.
